Vegan Tempeh and Quinoa Bowl with Spicy Thai Peanut Sauce

This spicy, nutty, zesty and healthy tempeh bowl was inspired by the rice bowls made at Fresh restaurants.  With tempeh, quinoa and veggies, it’s the perfect mix of protein, carb and veggies.  Enjoy!

Ingredients (serves 2):

  1. 2/3 block of organic tempeh (recommend Henry’s), cut into strips
  2. 2 servings of quinoa (1/4 or 1/3 cup)
  3. veggies of your choice — broccoli, eggplant, zucchini, mushrooms
  4. olive oil
  5. white wine vinegar and dash of soy sauce to taste
  6. bunch of cilantro leaves
  7. 1 tbsp organic peanut butter
  8. 3 tbsp low-sodium soy sauce
  9. 3 tbsp rice vinegar
  10. 1 tbsp lime juice
  11. 1 tsp cayenne pepper
  12. red chili flakes to taste
  13. 1 tsp hot chili sauce
  14. 1 tsp minced ginger
  15. 2 cloves garlic, minced

Instructions:

  1. Cook the quinoa as directed on package (bring 3/4 or 1 cup of water to a boil, insert quinoa, reduce heat to low, cover and let simmer for about 15 minutes).  Spoon quinoa evenly into two bowls.
  2. To cook the veggies, preheat the oven to 400ºF.  Place aluminum foil on a baking sheet and grease a bit with some olive oil.  In a bowl, combine veggies and mix with a spoonful of olive oil and a drizzle of white wine vinegar and soy sauce.  Spread veggies out on baking sheet and bake 10-15 mins, until tender and crispy around the edges.
  3. In a saucepan, heat a bit of olive oil and fry the tempeh for several minutes on each side until browned and crispy.
  4. To make the peanut sauce, start by heating the peanut butter in the microwave for 20 seconds to soften it up.  Add 3 tbsp soy sauce, rice vinegar, lime juice, cayenne pepper, chili flakes and chili sauce, minced ginger and garlic and stir well.  Cut up some of the fresh cilantro leaves and mix into the sauce as well.
  5. To serve, coat veggies in spicy sauce and place on top of cooked quinoa.  Place the tempeh pieces on top of the veggies, cover with remaining sauce, and garnish with fresh cilantro leaves.
